Broc Cellars - Le Clairet 2019
From Selection Massale: 95% Cabernet Sauvignon with 5% Carignan (145 year old vines!) sourced from the Wirth Vineyard in Solano County. Here the vines grow deep in the iron-rich soils and the entire parcel is farmed organically.
In the cellar, it's fairly simple. 90% of the Cabernet Sauvignon grapes were destemmed and the remaining were left whole cluster to line the bottom of the tank. Fermented with native yeast and no S02 and pressed early to lessen the amount of tannins in the wine. Before bottling, a small amount of 145 year-old vine Carignan from the current 2020 vintage - that was fermented 100% true carbonic - was pressed back into tank to add even more lift and freshness. This is a true Californian Claret if there ever was one.
